Welsh Cakes

If a cake and cookie had a baby, you'd get the Welsh Cake. Its not too heavy and just sweet enough to be enjoyed for breakfast with a hot cup of tea.

Ingredients

Dough

  • 8 oz all purpose flour

  • 1/2 tsp baking powder

  • 2 oz margarine

  • 2 oz butter

  • 3 oz sugar

  • 3/8 tsp allspice

  • 1 egg

  • 2 ounces dried currants (or raisins, or cranberries)

  • 2-3 tbsp of milk

  • 1 tsp of baking soda

Topping

  • sugar

Step 1

Mix together the flour, baking powder. Cut your butter and margarine into smaller pieces and add them to the dry ingredients. Incorporate them with your hands or a pie dough blender. You want the butter/margarine in small bits through out the dry ingredients (like you would have chunks of butter in pie dough, but smaller). Add sugar and allspice to flour and mix. Add in the currants.


Step 2

Beat the egg. In a separate bowl, mix the milk with the baking soda. Add the egg to the dry mixture and incorporate. Then add the milk/soda solution a little at a time, just enough to form a moist dough.


Step 3

Flour a surface and the top of dough ball. Roll out the dough to 1/4 inch. Cut into circles.


Step 4

On dry frying pan heated to medium low heat cook til lighted browned, flip and brown on the other side. Plate and sprinkle top side with caster sugar.
